1) You have to pick and choose in each situation. Attack moves are good for clearing the way, but land units will stop to attack anything on the way which slows them down and makes them stationary targets. When you want to make sure you break through and harass your opponent use move commands and when you want to clear the way of units use attack move. Attack move can be useful with navy for keeping ranged units out of range. Also using formation (hold right click) can be useful for land units to reduce speed or concentrate attack power and efficiently mop up scattered forces.
2) Adjust to the current battlefield composition and what ratios you think you need. Early on you might want to add a scout with 5 or so tanks from land factories, but also add an arty or two in because tanks are pretty weak on their own and arty is very strong against stationary targets or PD.
3) Unfortunately I don't think this is possible. You can send them to attack-move and then a patrol order which will probably be the closest you can get to automating it. Getting a factory to assist another will cause it to copy that factory's build queue.
4) T2 pg and shields can be useful depending on how you use them in your games. Which buildings and what order you have them built in depends on how much power you usually anticipate on needing/using.
E.g. 4 t2 pg, one shield
2 t2 pg, a t2 radar, a shield
T1 pg grids to surround factories e.g. 2 or 3 (spaced out to avoid splash damage) for each side of the factory.
T1 pg arrays with fair space in-between to avoid splash damage from t1 bombers.
(optional) Add one energy storage after a fair amount of pg.
Sometimes people use hydrocarbon + factories in build templates but it isn't really needed imo.
If you play stupid games like Thermopylae or x2 resources then you may find it useful having t3 pg/shield/ mass fabricator arrays and/or fabricator/storage arrays.
